Coconut Yogurt Parfait

Well.. lets start with the fact that I don’t really have a true name for this concoction because I made it up so that I could have something easy to grab when I needed it.


Coconut milk unsweetened yogurt – one container
Hemp seeds – 3 tablespoons
Chia seeds- 3 tablespoons
Flax seeds – 3 tablespoons
MCT oil vanilla flavor from Whole Foods or wherever you can find a flavored one.  The vanilla in this is what gives it some flavor.


Other Ingredients to add:
3 servings of protein powder
some kind of sweetener of your choice
Ingredients for Coconut Parfait

In the yogurt container, add all of the ingredients and stir until all is blended well!  Put back in fridge for about 30 minutes (at least) so the chia seeds have time to gel.

This can be eaten one serving at a time, topped with berries, on its own or blended into a smoothie with some greens and fruit added.  This mix is rich in protein, fiber, omega-3 fatty acids, and is also great for an energy booster.  Best of all you have approximately three servings ready to reach for and it’s all contained in the yogurt container!
