Here’s an easy Butternut Carrot Ginger soup that will take you 10 minutes max!
– 1 cubed butternut squash
– 3-5 chopped carrots
– 2 cloves garlic
– 1 can coconut milk
– 1 cup chicken stock or veggie stock
– Ground ginger to taste
– Salt to taste
If you’re like me, I buy the butternut squash already cubed! Steam the veggies, put in the blender with remaining ingredients, and blend well. May need to do it in two rounds in the blender. Transfer to pot to cook on stove about 5 minutes.
Pour into a soup cup and throw on some jalapeño’s for a little kick and serve. Fast, easy and sooooooo delicious! Look at that color- I feel healthier just looking at it👀
Additional topping options: – toasted coconut flakes, cilantro, and/or toasted almonds. All of these taste great!
