Kickin’ Pineapple Strawberry Salsa

Sorry we haven’t posted for over a week, but the summer has been keeping us busy and I (Libby) spent 7 days in Mexico enjoying 5 days of torrential downpours (unfortunately, I’m not joking!).  But the good news is that we have been stock piling a lot of fresh material that we’re excited to share over the remainder of the summer like this great Pineapple Strawberry Salsa recipe that is the perfect healthy app for your summer outings.

Kickin’ Pineapple Strawberry Salsa

  • 1/2 cubed pineapple
  • Handful chopped cilantro
  • 10 chopped strawberries
  • 1/2 chopped yellow onion
  • 1 minced Serrano pepper (here’s your kick – optional)
  • Salt to taste
  • 1 clove garlic
  • 1/4 cup or to taste apple cider vinegar

Directions

Chop half of a pineapple into small cubes, but make sure they are bite size pieces so people can enjoy the salsa without try to manipulate huge chunks on a tortilla chips.  The same goes for the strawberries.  Add the cilantro, onions, Serrano pepper, and garlic.  Mix in the apple cider vinegar slowly and taste as you go so you don’t overpower the salsa.  Add salt to taste.  Serve with tortilla chips of your choice.
