With the snow and cold weather here to stay for a while, we thought we’d play pretend and update the very first cocktail we posted at Nearly All Things – the Lo-Cal Pain Killer Cocktail is even more lo-carb and lo-cal this time around! One sip of this and you’ll be thinking warm sunshine, sandy beaches, and hot bartenders serving you tropical drinks with colorful, tiny umbrellas….pretend, remember? 😉
The beauty of this yummy cocktail is that we’ve reduced the sugar this time around to make it even more lo-carb and keto friendly, because we are all still trying to stay on track, right? The secret to this drink is to use coconut vodka (rather than rum) and be sure to juice your pineapple rather than buying pineapple juice from the store. This will keep the sugars even lower. If you want to go even lower in calories, you could substitute some of the unsweetened coconut milk with unsweetened coconut water – but that just might be taking this “staying on track” theme a little too far… you decide.
Lo-Carb, Lo-Cal Pain Killer:
Ingredients:
- Full glass of ice
- CÎROC™ Coconut vodka
- 1/4 cup fresh pineapple, juiced (5 carbs, 4g sugar)
- 2 – 3 oz unsweetened coconut milk
