I don’t know about you but breakfast can get pretty boring these days. And, while I have plenty of greens and frozen berries in my fridge, some mornings I find myself unwilling to make a smoothie. So, inspired by a breakfast I had at Heartwood, a local coffee shop, I decided it was time to try my own breakfast bowl.
The secret to this breakfast bowl is making a big batch of quinoa for the week. Then, you just take a scoop out each morning. Easy.
I used a cup of cooked quinoa, but that makes for a pretty hefty bowl, so 1/2 cup is probably just enough.
Southwest Quinoa Breakfast Bowl
Ingredients:
- 1/2 – 1 cup cooked quinoa
- 2 hard boiled eggs sliced
- 1/2 avocado sliced
- 1-2 Tbsp salsa
- 1/2 jalapeño sliced
- 1/4 tsp cumin
- salt
- pepper
Throw all of your ingredients in a bowl and top with seasoning to taste I end up mixing it all together.
If you plan to have this often make a large batch of quinoa and boil a bunch of eggs for the week. Then this is super easy each morning and such a treat! After all, breakfast doesn’t have to be boring 🙂
