We had a social distancing Mexican happy hour with these Skinny Pineapple Coconut Jalapeño Margaritas and this delicious Lazy Jalapeño Popper appetizer. Here’s to doing what we can to make life a bit more spicy!
Skinny Pineapple Coconut Jalapeño Margaritas
The beauty of these margaritas is that while they sound like they would be full of fat and calories, they are surprisingly skinny since the coconut flavor is infused in the tequila. Just 69 calories per oz and no fat!
Ingredients:
2 oz coconut tequila
3-4 oz pineapple juice
1 oz lime juice
1 jalapeño
Directions:
Muddle jalapeños to desired spice in a glass and set aside.
Add lots of ice to a shaker. Add in your liquid ingredients and shake. Pour as a martini or serve it over a glass of ice. If you have something fun like these cowboy boot glasses, use them! Now is the time 😉
Lazy Jalapeño Popper Dip
Here’s a great recipe when you don’t have the time or just don’t feel like roasting and stuffing jalapeños. This was a hit and made us wonder – why do it any other way?
Ingredients:
8 oz cream cheese softened
1 cup shredded cheddar cheese
5 raw jalapeños
7-8 strips of bacon
Add cream cheese, cheddar cheese and jalapeños to your blender. I literately threw them all in there. I also added a touch of water so it would blend easier.
Put mixture in a baking dish (I used a mini bread tin and bake until warmed through.
Top dip with cooked strip of bacons (the crispier the better) and add extra jalapeños slices and more cheddar cheese if you please! Serve with you favorite tortilla chips or veggies if you are trying to be a bit healthier.
