7 Day Smoothie Challenge

I don’t know about you, but after most holiday weekends, I feel like I need to hit the refresh button.  So, I whipped up the Green Goblin Smoothie from Simple Green Smoothies to give me some much needed energy and get myself back on track for the week.

I should mention that extremes aren’t really my thing, especially when it comes to nutrition.  I’m more of the mindset that moderation is a good thing.  So, when I found the 7 day smoothie challenge called Simple 7 by Simple Green Smoothies, I was pumped that it involved making small changes rather than changing your whole diet.

After you submit your email, you’ll receive a A Simple 7 – Game Plan, and the best part – it’s free!  It includes a shopping list of the 7 ingredients you will need for the week (yes, 7!).  And you will recognize all 7 ingredients and easily find them at your local grocery store.

You will also be given a daily smoothie schedule with easy to follow recipes.  All the challenge requires is that you follow the daily smoothie schedule for 7 days.  Yep, just add one smoothie a day for a week – no other requirements.  Since this type of challenge was right up my alley, I submitted my email and started it.  It was super easy to follow and I felt great. I had energy, my skin looked better, and I had lost all those pesky weekend lbs. that love to follow me around 😉

The Green Goblin Smoothie from Simple Green Smoothies:

  • 1 cup spinach (I used kale instead)
  • 1/2 cup water
  • 1 orange, peeled
  • 1 cup pineapple
  • 1/2 banana

Instructions:

Mix your greens and water first until you get a nice smooth consistency.  Then, add your remaining ingredients and blend.  If you want this cold – use frozen pineapple and frozen bananas (don’t throw those brown bananas away – chop and freeze instead ;)).

In fact, it wasn’t until the following week when I wasn’t having the smoothies, that I realized how great I had felt the week before on the Simple 7 challenge.  Which is why I’m returned to the program.

Here’s a delicious summer salad that is healthy and looks beautiful!  You’ll be amazed at how easy this can be:

Truth be told, I really don’t measure anything when I put this salad together.  I go by look and try to even out the ingredients so it looks great.  The measurements listed below are approximate and will vary on the size/shape of your bowl and your preferences.  Just add the dressing slowly.  Less is more here, but feel free to drown it if that is your preference 😉

  • 1/4 – 1/2 cup feta cheese (based on preference)
  • 1 cup blackberries
  • 1-2 cups cubed or balled honeydew
  • 1 small container of spring mix
  • 1/4 cup Garlic Expressions – more or less based on your preference.

Basil Tomato Parmigiana Hummus

We just served this to a small gathering of women at our neighborhood luncheon and it was a hit!  Ashlee surrounded the dip with cucumber slices and a spoon.  She also placed a bowl of pita chips on the side.  Everyone scooped up the dip with the cucumbers and we were left with a lot of pita chips.  With a different group (we are thinking tweens and teens) the pita chips would probably be devoured.  We like giving your guests the option to choose for themselves 😊.

Ingredients:

Garlic hummus
Fresh pesto (buy or make)
Chopped tomatoes
Freshly grated parmesan cheese

Directions:

Spread the garlic hummus on your serving plate. Lightly spread the pesto on top of your hummus layer.  Place your chopped tomatoes on top of the pesto layer.  Sprinkle with parmesan cheese.  Freshly grated looks prettier and tastes better!  Serve with cucumbers & pita chips (if gluten isn’t a problem).

This is an easy recipe that requires few ingredients and is healthy!  Appetizers don’t always have to make us feel guilty!

Easy Tomatillo Salsa

This Tomatillo Salsa Recipe is easy and only contains a few ingredients.   It’s perfect for a last minute appetizer, a quick snack, or a delicious topping to your favorite Mexican meal.  Personally, I can’t wait to make avocado toast, top it with a fried egg, then cover it with this delicious sauce – yum!  I will probably add some jalapeños for added spice.

Ingredients:

  • 10 tomatillos
  • 2 cloves garlic
  • 1/4 cup chopped onion
  • 1 jalapeño chopped (optional)

Directions:

Throw ingredients in a food processor and mix until you get a consistency that you like – could it get much easier?  Check out the video below to see how quick this will be:

It really is that fast and easy – in fact, you don’t have to chop the ingredients all that much either.  Here’s the finished product – how fast can you say “yum!”?

Shrimp and Cauliflower Grits

Shrimp and Cauliflower Grits

Looking for a healthy, carb-free meal that tastes great this summer?  Try this spicy shrimp and cauliflower grits!  If spice isn’t your thing, you can always refrain from some of the seasoning – but we say go for it!

Ingredients:

  • 1 head of cauliflower
  • 2 Tbsp grass fed butter
  • 1 clove garlic
  • 4 Tbsp heavy cream
  • a couple of pinches of salt and pepper
  • 1.5 Tbsp garlic olive oil per 5 shrimp (Trader Joe’s is awesome)
  • Garlic jalapeño seasoning – to taste
  • Sriracha seasoning – to taste (we like things spicy!)
  • Jumbo shrimp (already peeled with tails on) – 5 per person
  • Parsley

Spices for Shrimp and Cauliflower Grits

Direction for GRITS*:

Cut up the entire head of cauliflower and steam.  Once steamed, put it in the blender or food processor with butter, garlic, heavy cream and a pinch of salt and pepper.  Pulse or blend to the consistency of grits. Add this to a pot to warm on the stove.

*Makes about 4-5 servings depending on size of cauliflower head

Direction for SHRIMP:

Cook shrimp in oil,  garlic jalapeño seasoning and Sriracha spices until the shrimp turn white in color.

Putting it all together:

Place about a cup of your cauliflower grits into a bowl.  Top with your cooked shrimp and drizzle oil from shrimp pan over the shrimp and grits.  Sprinkle the top with parsley.

It takes about 15 mins to put together and it’s perfection – you won’t even miss the real grits!

Frothy Coffee to Get the Day Rolling

Here’s a delicious frothy coffee that has all healthy fat and no dairy.   Throw it in an inspiring mug like mine and get your day rolling!

Why did I add MCT Oil?  It’s great for ramping up your endurance for a morning workout and can help you lose weight too. For more health benefits of MCT Oil check out this.

Ingredients for Frothy Coffee:

  • 2 tablespoons of organic coconut cream (mine is traders Joe’s brand)

365 MCT Oil vanilla

  • Dash of cinnamon
  • 1 cup brewed coffee (cold or hot)

Directions:

Add ingredients, blend and pour! If you prefer cold coffee, pour your coffee over ice or crush up ice for a frozen coffee treat.  Try this and let us know how you like it.

Kickin’ Pineapple Strawberry Salsa

Sorry we haven’t posted for over a week, but the summer has been keeping us busy and I (Libby) spent 7 days in Mexico enjoying 5 days of torrential downpours (unfortunately, I’m not joking!).  But the good news is that we have been stock piling a lot of fresh material that we’re excited to share over the remainder of the summer like this great Pineapple Strawberry Salsa recipe that is the perfect healthy app for your summer outings.

Kickin’ Pineapple Strawberry Salsa

  • 1/2 cubed pineapple
  • Handful chopped cilantro
  • 10 chopped strawberries
  • 1/2 chopped yellow onion
  • 1 minced Serrano pepper (here’s your kick – optional)
  • Salt to taste
  • 1 clove garlic
  • 1/4 cup or to taste apple cider vinegar

Directions

Chop half of a pineapple into small cubes, but make sure they are bite size pieces so people can enjoy the salsa without try to manipulate huge chunks on a tortilla chips.  The same goes for the strawberries.  Add the cilantro, onions, Serrano pepper, and garlic.  Mix in the apple cider vinegar slowly and taste as you go so you don’t overpower the salsa.  Add salt to taste.  Serve with tortilla chips of your choice.
